Carbonara译为卡邦尼意粉/白汁烟肉意大利粉/培根蛋面,我这里翻译成罗马白汁意面。与一般白汁意面比较,最正宗的Carbonara是不使用鲜奶油的,而是用芝士鸡蛋拌匀后作为酱汁。对于面条的选择,长条意面(speghetti)是作为烹饪Carbonara最地道且最常用的意面面条。

    In a large pot, put enough water and wait until it boils. Add an appropriate amount of sea salt (every 500 gram of pasta uses approx 3.5 litres of water and 1 tbsp of sea salt).Add the pasta into the boiling water and let it soak completely in the water. Use a fork to stir and separate the pasta. Stir occasionally to stop sticking. Cook according to the package instructions until "al dente". You can keep a cup of starch water to use late. carbonara4

  • 煎培根|Pan fry the bacon
    蒜头去皮并用刀面稍稍压碎;培根切小粒。开中火到大火,平底锅上放入橄榄油,油热后加入蒜块,煮2分钟让蒜味释放后,加入培根粒,煮10分钟左右至培根变脆。如果培根较肥,在煎的过程中你会惊讶原来会出这么多油。我觉得油多不用担心,当意粉和培根以及酱汁混合时,这些培根油会被吸收掉的。如果培根比较瘦,那么可能要再加点橄榄油了。期间偶尔翻炒即可。培根煎好后取出蒜块。
    Peel the garlic and crush with the knife; cut the bacon into small pieces. Over medium-high heat, put in the olive oil. When the oil is hot, add the garlic and leave it to flavour for 2 minutes. Then stir in the bacon and pan fry for about 10 mins until it starts to get crispy. When the bacon is cooked well, pick out and discard the garlic from the pan. carbonara5

  • 上盘|To serve
    彻底拌匀后,如果意面感觉较干较稠的话,加入适量淀粉水(煮意面时备用的)。上碟,撒上适量的帕玛森芝士碎和现磨大量黑椒即可。也可以根据个人喜好加入香草哦。 Toss well until all the dressing is clinging to the spaghetti. If it is too thick, add some starch water (saved earlier). Serve with more grated Parmesan, salt and a generous amount of pepper to taste or some herb if preferred. carbonara7
    上盘|To serve
    彻底拌匀后,如果意面感觉较干较稠的话,加入适量淀粉水(煮意面时备用的)。上碟,撒上适量的帕玛森芝士碎和现磨大量黑椒即可。也可以根据个人喜好加入香草哦。 Toss well until all the dressing is clinging to the spaghetti. If it is too thick, add some starch water (saved earlier). Serve with more grated Parmesan, salt and a generous amount of pepper to taste or some herb if preferred. carbonara7
