传统的Souvlaki是用猪肉或者羊肉(现在也有用牛肉,鸡肉,甚至鱼肉)作为食材,经香料腌制,以串签固定后烤制而成。吃用时为了避免过于单调,当地人常常会搭配皮塔饼(pitta bread)享用。常见的吃法是将烤肉和番茄,洋葱,酸奶蘸酱等配料夹在或裹在皮塔饼(pita bread)里,或者将各配料分开放在碟子上,食用时用手撕开皮塔饼皮夹料一口一口享用。这里还要提一下经常用来搭配Souvlaki的黄瓜酸奶蘸酱。蘸酱(Tzatziki),是希腊饮食的一大特色。这个食谱中的黄瓜酸奶蘸酱做法简单且风味十足,是食用希腊烤肉不可或缺的蘸酱。
The traditional Souvlaki is usually pork or lamb (although nowadays beef, chicken or even fish may also be used) as the meat ingredient, marinated with spices and grilled on skewers. The locals usually wrap the souvlaki with tomatoes, onion and Tzatziki in a pitta bread. Souvlaki is usually served with separate sides on the plate and you tear off the pita bread and wrap it with the sides on each bite. Tzatziki is one of the features of greek dining. The Tzatziki used in this recipe is usually paried with souvlaki with great flavour.

    Put half of the thin onion, together with the garlic in a blender and put in cinnamon, cumin, coriander, paprika and peanut oil. Blend till become paste. If not using blender,simply combine well with all the ingredients. souvlaki4 souvlaki5
