正宗的欧姆蛋(Omelette)是用打匀的蛋液,加入芝士,蔬菜或者肉类等,在平底锅中煎熟的蛋夹馅式蛋饼。虽然很多欧姆蛋的蛋馅用料搭配自由,然而地道西班牙欧姆蛋(Tortilla)的蛋馅相对固定,单单由土豆和洋葱制作而成。
An omelette is a dish containing egg that has been lightly beaten and cooked in a frying pan. Often the omelette will have a filling of some sort such as cheese, vegetables or meat. Although there are no restrictions on the fillings for most omelettes , the Spanish version, tortilla, is made with potatoes and onion only.

  • 预处理食材|Preparation
    土豆去皮,对半切开(如果土豆偏大,可1/4切开);将切开的土豆切成5mm厚的薄片;用厨房纸吸干水份。 洋葱去皮对半切开,同样切成5mm厚的薄条。
    Cut potatoes in half lengthways then depending on size cut each piece in half again;Slice the pieces of potato into 5mm thick slices;Dry the slices of potatoes using kitchen towel;Cut the onion in half and slice it into 5mm slices.
    预处理食材|Preparation
    土豆去皮,对半切开(如果土豆偏大,可1/4切开);将切开的土豆切成5mm厚的薄片;用厨房纸吸干水份。 洋葱去皮对半切开,同样切成5mm厚的薄条。
    Cut potatoes in half lengthways then depending on size cut each piece in half again;Slice the pieces of potato into 5mm thick slices;Dry the slices of potatoes using kitchen towel;Cut the onion in half and slice it into 5mm slices.
  • 炸熟洋葱和土豆|Fry the onions & potatoes
    中火,在24cm的平底锅中倒入橄榄油;油热后放入洋葱炸2分钟,此时油会冒泡;加入土豆炸10分钟左右,期间要偶尔翻动一下;10分钟后用叉子测试一下土豆是否煮熟(叉子能轻易穿过土豆);洋葱和土豆表面会稍稍呈浅棕色,但不要煮焦或炸脆。 煮好土豆和洋葱后,通过滤筛滤出;如果想尽量降低油量,可用厨房纸吸干表面的油。
    In a 24cm frying pan put the oil and heat over a medium heat;Add in the sliced onions and fry for 2 minutes - the oil should be bubbling;Add in the sliced potatoes and fry for 10 minutes turning occasionally. The oil should cover the onions and potatoes and be bubbling. Test the potatoes after 10 minutes. The potato should be easy to break with a fork. You can also taste a small piece to make sure it is cooked and soft.The onions and potatoes may brown slightly but should not be burnt or crisp. Remove the onions and potatoes from the pan using a slotted spoon to drain the oil. Put the mixture in a metal sieve over a bowl to drain any excess oil and dab with a paper towel to remove any oil.

    制作完美欧姆蛋的关键 之前提过,选好锅是做出成功欧姆蛋的重中之重!和选好锅同样重要的是调节好火力。火力和锅子这两个因素决定了欧姆蛋的厚度,颜色和表面的褶皱。 虽然西班牙式欧姆蛋(tortilla)不需要像法式欧姆蛋那样要求表面不留任何鸡蛋烧灼的深棕色痕迹(法式欧姆蛋表面是光滑干净的淡黄色蛋皮),但是对于西班牙式欧姆蛋来说,选好锅和控制好火力同样重要。因为这样成品才不致于煎焦。 大火,在20cm尺寸的不粘平底锅中热少许油(能均匀覆盖锅底即可);缓慢倒入蛋糊并用勺子轻轻推平表面的土豆和洋葱;大火煮1分钟后调至最小火煮约2分钟;蛋底开始凝固后,借助碟子,如下图1将蛋饼翻转(碟子至少要和平底锅一样大!);碟子靠近平底锅边缘,如下图2将蛋饼快速推入锅中;调大火煎1分钟后调至最小火煎2分钟。
    Put a little oil in a slightly smaller (20cm diameter) non stick frying pan over a high heat. Add the egg mixture and even out. Cook on a high heat for about a minute then turn down and cook on low for a further 2 minutes. Put a flat plate over the top of the frying pan and holding the plate tight to the pan turn the frying pan over so the partly cooked omelette is on the plate. Turn the heat up to high and carefully slide the omelette back into the pan so the bottom gets cooked. Cook on high for a minute then on low for another 2 minutes.

重要提示:选对锅非常重要!如果锅子薄身,受热不好且粘锅,不但影响成品的色味,而且很容易煮焦。其次,如果锅尺寸太大,蛋馅层会偏薄,不是传统Tortilla应有的浓厚口感。

Note: choosing the right pot is vitally important! If the pot is too thin and does not conduct the heat well and food sticks to it, then it will not only affect the colour and the flavour of the omelette, but also will easily burn. Also, if the size of the pan is too big, then the filling layer will turn out to be thin, which is not the dense flavour of the traditional tortilla.

重要提示:选对锅非常重要!如果锅子薄身,受热不好且粘锅,不但影响成品的色味,而且很容易煮焦。其次,如果锅尺寸太大,蛋馅层会偏薄,不是传统Tortilla应有的浓厚口感。
