Moules marinier is a classic dish from the region of Normandy in northern France that has become a worldwide classic. It is one of the must-try dishes when you are in France. The authentic moules marinier is an easy to cook simple dish. It uses a steaming method of cooking, with the mariniere sauce, which uses white wine as the base, together with shallots, butter and herbs. If served as a starter, it is usually served with bread; if served as a main course, it usually goes with fries, which is also called moules frites.

  • 预处理青口贝和欧芹|Preparation
    青口贝:用流动水充分冲洗。注意贝口是否有海草,有的话要拔除。稍微翻开青口贝,看看里面有没异物,因为贝肉里面有时候会有青口贝吃进去的海草等。寄生在贝壳上的小贝壳最好也是处理掉,这样吃起来会比较卫生。丢弃壳面破碎或者贝口打开的贝,因为这样的贝不新鲜。 欧芹:切碎1汤匙量的欧芹,备用。
    For the mussels: Clean the mussels by thoroughly scrubbing them under plenty of running water, pulling away the fibrous beards protruding from between the tightly closed shells. Discard any broken mussels along with the 'beards', and any mussels that don't close tightly when you tap them or squeeze them. Scrape or knock off any barnacles or growths on the mussels shells. Rinse under clean water. For the parsley:chop a tablespoon of parsley to use later

    In a large pot add 25g butter to pan and melt over low heat. The pot should be large enough that the mussels should about half fill it and it should have a good fitting lid.Add chopped shallots and fry for 5 minutes until soft and translucent.Add sprig of thyme, bunch of parsley, bay leaf and white wine to the pot. Turn the heat up to medium until the wine boils and simmer for 5 minutes.Add the cleaned mussels to the pot and give them a good stir, being careful not to damage any of the shells.Bring the liquid in the pot to a boil and put the lid on the pot. Steam the mussels in the pot for about 5 minutes. Give the pot a good shake every so often.When the mussels are cooked they will all have opened. If any do not open then discard them.
