肉酱(Bolognese sauce)意文为ragù alla bolognese,以其发源地,意大利的一个小镇bologna命名。这款酱汁是以肉类为基底(通常是牛肉碎为主,加入小量稍肥腻的猪肉碎),由洋葱,芹菜,胡萝卜,红/白葡萄酒,番茄泥,或有时加入鲜番茄,慢煮而成。在传统意式料理中,肉酱有两种经典搭配:1.搭配意大利扁面条,也叫宽面(Tagliatelle),制作成Tagliatelle al ragù/Tagliatelle alla bolognese. 2.搭配千层面(lasagne),制作成lasagne alla bolognese.下一期我们将会用同样的肉酱,教大家做地道千层面-Lasagne alla bolognese。

  • 切好蔬菜|Prepare the vegetables 将洋葱,胡萝卜去皮切粒,芹菜切粒(如需要,可查看文末相关博文中具体操作),蒜头去皮剁碎,罗勒叶剁碎。

  • 制作肉酱| Make bolognese sauce 开中火,在厚重汤锅中加入橄榄油,油热后加入培根煎至金黄。加入洋葱和蒜蓉,煮至软熟;加入胡萝卜,煮5分钟;加入芹菜,煮5分钟;再加入迷迭香,搅拌均匀。 调大火,加入肉碎,煮至变棕色后加入番茄浓缩酱,搅拌均匀。加入红酒,煮沸后待液体减少1/3后加入番茄泥并搅拌均匀。 调小火,加入罗勒和月桂叶后盖上锅盖慢煮1到1个半小时直至酱汁变得浓稠(期间要不时打开搅拌一下,避免煮焦)。
    Heat the oil in a large, heavy-based saucepan and fry the bacon until golden over a medium heat. Add the onions and garlic, frying until softened. Add carrots and fry for 5 minutes. Add celery and fry for further 5minutes. Add rosemary and stir. IncreaseMake bolognese sauce the heat and add the minced beef. Fry it until it has browned. Add tomato puree and mix well. Pour in the wine and boil until it has reduced in volume by about a third. Reduce the temperature and stir in the tomatoes. Add bay leaf and chopped basil.
    Cover with a lid and simmer over a gentle heat for 1-1 1/2 hours until it's rich and thickened, stirring occasionally.

Add an propriate amount of seasalt (every 500 gram of pasta uses approx 3.5 litres of water and 1 tbsp of sea salt).Add the pasta into the boiling water and let it soak completly in the water. Use a fork to stir and seperate the pasta. Stir occassionally to stop sticking. Cook according to the package instructions until "al dente". You can keep a cup of starch water to use later. Strain the pasta in a colander. Add the olive oil and some sauce to prevent it being dry/sticky.
